This recipe makes about ⅓ - ½ a cup, depending on how thick you want it to be. The recipe can easily be doubled but will take a little longer to reduce due to the increased quantity.
You will need:
- 1 cup balsamic vinegar
- 2 teaspoons brown sugar (or maple syrup or white granulated sugar)
Is sugar necessary?

Step By Step Instructions
- Place the balsamic vinegar into a small saucepan and add the sugar.
- Place the saucepan over medium heat and simmer for 12 – 15 minutes, stirring occasionally. Reduce heat as the liquid reduces and continue to cook until it has reduced by half - at this stage, it should lightly coat the back of a spoon.
- Remove from the heat.
- Allow it to cool, then transfer to an airtight container.
- This sauce will keep for 3-4 weeks. Store in the fridge.

Reduction time will vary depending on the saucepan size - the larger the saucepan, the greater the surface area, and the quicker it will reduce.
Overcooking
As the balsamic vinegar reduces, keep a close eye on it because it can become very thick very quickly, and if you are not careful, it can burn.
If it has become too thick, thin it down with a small amount of water, and if it has burnt, ditch it and make a fresh batch.
