    Chocolate - We used white chocolate, but you could also use dark or milk chocolate. 

    Butter - adding a little butter to the mixture makes for a softer rocky road. You can use salted or unsalted butter.

    Marshmallows - We used mini marshmallows, but regular-sized marshmallows, or even the big ones, cut into smaller pieces can be used. 

    Nuts - we used peanuts, but you could use whatever you have on hand or leave them out.

    Froot loop cereal - these are mixed into the white chocolate and give the rocky road a crispy and crunchy texture. But you could replace this with rice bubbles or even crushed rich tea biscuits, 

    Halloween candy - we used gummy snakes, Halloween-themed sprinkles, candy corn, candy eyes, and orange and brown M&M's for the topping but, you could use whatever you like.

    🍳 Step By Step Instructions

    Make sure to follow the steps below and have everything ready before melting the chocolate because the chocolate will start to set as soon as it cools. So you have to work quickly.

    Line a 20 cm (8 inches) square cake tin with baking paper, extending it over two opposite sides for easy removal.

    Step 1 - Place the white chocolate and butter into a large microwave-safe bowl. Melt the chocolate in the microwave in 15-second intervals, stirring in between until melted. You could also melt the chocolate in a double boiler.

    Step 2 - Mix the peanuts, cereal, and marshmallows into the melted chocolate.

    Step 3 - Transfer the chocolate mixture to the prepared tin and use the back of a metal spoon to spread the mixture evenly into it.

    Step 4 - Top with Halloween-themed sprinkles, M&M's, gummy snakes, and candy eyes, gently pressing them down to hold them in place. 

    Place the rocky road in the fridge to set for at least 1 hour, and cut into 16 pieces or any size you like.

    Tips for Melting Chocolate In the Microwave

    Don't overcook the chocolate

    When melting the chocolate in the microwave, you can very easily overcook it.

    If this happens, you end up with a dough-like consistency rather than liquid chocolate, and you won't be able to use it for this recipe.

    Microwave at short intervals

    The best way to melt the chocolate in the microwave oven is to place it in a large dry microwave-safe bowl or jug.

    Start the melting process by microwaving in 15-second bursts on high, stirring the chocolate bits with a metal spoon in between intervals until melted.

    Tips for cutting rocky road

    Before cutting the rocky road, let it stand at room temperature for about 30 - 60 minutes to soften. 

    Use a large sharp knife to cut the rocky road. To make cutting easier, warm the knife in hot water and dry it before cutting the slice.

    This recipe makes 16 large servings but cut the slice into any sized pieces you like.

    A single serving of this Halloween rocky road without the topping has about 225 calories.

    🌡️ Storage

    Refrigeration – In cool climates, this Halloween rocky road can be left out at room temperature for three to four days, stored in an airtight container in a cool dark place.  

    Alternatively, place the rocky road in an airtight container and store it in the fridge for up to two weeks.

    Freezing – For longer-term storage, freeze them for up to three months. 

    To freeze the rocky road, cut it into serving-size pieces, wrap each piece tightly in plastic food wrap, or place it into freezer-safe bags. 

    When you want some, remove the required amount from the freezer and let them stand at room temperature for an hour or two to defrost.

    Can I use a double boiler to melt the chocolate?

    Yes, you can! Here's what you need to do;

    Use a small to a medium-sized saucepan and fill it about one-quarter full with water. Place the saucepan over medium heat and bring to a boil, then turn down the heat low. 

    To melt the chocolate, you will need a heatproof bowl that is large enough to sit on top of the pot. See the notes below about selecting the correct size bowl.

    Place the chocolate into a heatproof bowl, and place the bowl on top of the saucepan and simmering water.  

    Allow the chocolate to sit over the low heat for a few moments, and use a metal spoon to stir the chocolate until it is smooth and lump-free.  

    You could also use a silicone spatula to stir the chocolate but don't use a wooden spoon. 

    Wooden spoons retain moisture and odors from other cooking, and these can be transferred to the chocolate.

    Selecting the correct bowl size - The bottom of the bowl must not touch the water, and the sides of the bowl must extend up past the top of the saucepan so the steam can't get into the bowl. 

    Don't allow steam or any moisture to enter the bowl when melting the chocolate because it will cause the chocolate to seize and make it unworkable.

    INGREDIENTS

    • 375 grams (13 ounces) of white chocolate
    • 113 grams (4 ounces, 1 stick) of butter cut into small pieces
    • ½ cup roasted peanuts
    • 1 cup mini marshmallows
    • 50 grams (1.7 ounces) froot loops cereal
