Ingredients
  

  • 440 grams (15.5 ounces) bananas over ripe and mashed - (just over 1 ⅓ cups or 5 large)
  • 100 grams (3.9 ounces) butter melted
  • 100 grams (.39 ounces) brown sugar lightly packed
  • 2 large eggs beaten
  • 1 teaspoon vanilla essence
  • 1 level teaspoon mixed spice powder
  • 250 grams (8.8 ounces plain flour all purpose flour
  • 2 level teaspoons baking soda

Instructions
 

  • Preheat oven to 180°C (350°F). Grease and line a 13 x 23 cm (5 x 9 inch) loaf pan.
  • Mash the bananas in a large mixing bowl, add butter, brown sugar, beaten eggs, vanilla and mixed spice powder mix well with a wooden spoon.
  • Add the flour and baking soda, mix until just combined.
  • Pour the batter into the prepared loaf pan, use the back of a spoon even out the batter.
  • Bake in the preheated oven for 35-50 minutes or until cooked. To test if the banana bread is cooked, insert a skewer into the centre of the loaf, if it comes out clean it is cooked.
    Tip: Check the cake about 30 minutes. If the top of the cake looks like it is going too dark, loosely over the cake with a piece of aluminium foil, this will prevent burning.
  • Remove from the oven and cool in the tin of 10 minutes, before turning out onto a wire rack to cool completely.
