440grams(15.5 ounces) bananasover ripe and mashed - (just over 1 ⅓ cups or 5 large)
100grams(3.9 ounces) buttermelted
100grams(.39 ounces) brown sugarlightly packed
2largeeggsbeaten
1teaspoonvanilla essence
1level teaspoonmixed spice powder
250grams(8.8 ounces plain flourall purpose flour
2level teaspoons baking soda
Instructions
Preheat oven to 180°C (350°F). Grease and line a 13 x 23 cm (5 x 9 inch) loaf pan.
Mash the bananas in a large mixing bowl, add butter, brown sugar, beaten eggs, vanilla and mixed spice powder mix well with a wooden spoon.
Add the flour and baking soda, mix until just combined.
Pour the batter into the prepared loaf pan, use the back of a spoon even out the batter.
Bake in the preheated oven for 35-50 minutes or until cooked. To test if the banana bread is cooked, insert a skewer into the centre of the loaf, if it comes out clean it is cooked.Tip: Check the cake about 30 minutes. If the top of the cake looks like it is going too dark, loosely over the cake with a piece of aluminium foil, this will prevent burning.
Remove from the oven and cool in the tin of 10 minutes, before turning out onto a wire rack to cool completely.
