Quick and easy to make, strawberry almond milk is a delicious dairy-free drink to enjoy chilled on hot summer days or any time of the year. This pink strawberry-flavored drink is vegan, gluten-free, and dairy-free.
80grams(2.8 ounces / ½ cup) diced strawberries, fresh or frozen
¼cupwhite granulated sugar or monk or beet sugar
⅓cupwater
2cupsalmond milkunsweetened
Instructions
Place the strawberries, sweetener, and ⅓ cup of water into a small saucepan, and bring it to a boil over medium-high heat. Turn down the heat, and simmer for about 10 minutes while stirring frequently. Remove from the heat.
Pour the strawberry mixture into a strainer and drain it into a small bowl. If you want thin strawberry milk,, discard the cooked strawberries or use them as topping on breakfasts like overnight oats. If you want thick strawberry milk, use the back of a metal spoon to push the cooked strawberries through the sieve and mix them into the syrup. Use the spoon to clean the pulp from the outside of the strainer and add it to the bowl. Discard the seeds left inside the strainer.
Place the almond milk into a large jug and pour in the strawberry syrup until well combined. Cover and refrigerate for at least 2 hours.
Serve chilled.
Notes
Optional - mix in a few drops of red food coloring if you want a stronger pink color in the milk.
