113grams(4 ounces, 1 stick) of buttercut into small pieces
½cuproasted peanuts
1cupmini marshmallows
50grams(1.7 ounces) froot loops cereal
Instructions
Line a 20 cm (8 inches) square cake tin with parchment paper, extending it over two opposite sides for easy removal.
Place the white chocolate and butter into a large microwave-safe bowl. Melt the chocolate in the microwave in 15-second intervals, stirring in between until melted. You could also melt the chocolate in a double boiler.
Mix in the peanuts, cereal, and marshmallows.
Transfer the mixture to the prepared tin and use the back of a metal spoon to spread the mixture evenly into it.
Top with Halloween-themed sprinkles, M&M's, gummy snakes, and candy eyes, gently pressing them down to hold them in place. Place the rocky road in the fridge to set for at least 1 hour, and cut into 16 pieces or any size you like.
Notes
Don't overcook the chocolate.When melting the chocolate in the microwave, you can very easily overcook it.If this happens, you end up with a dough-like consistency rather than liquid chocolate, and you won't be able to use it for this recipe.Microwave at short intervalsThe best way to melt the chocolate in the microwave oven is to place it in a large dry microwave-safe bowl or jug.Start the melting process by microwaving in 15-second bursts on high, stirring the chocolate bits with a metal spoon in between intervals until melted.Tips for cutting rocky roadBefore cutting the rocky road, let it stand at room temperature for about 30 - 60 minutes to soften. Use a large sharp knife to cut the rocky road. To make cutting easier, warm the knife in hot water and dry it before cutting the slice.
